What You’ll Need:
3 lbs potatoes (russets—peeled)
2 small or 1 large yellow onion, sliced thin
2 cups milk (2% or whole—leave the skim in the gym bag)
2 cups shredded cheese (cheddar, gruyère, or whatever makes your heart sing)
½ Tbsp Jerry’s Faves “Scale Up” (the star of this creamy show, use more if your heart tells you to)
Optional: chopped chives, bacon bits, or crispy onions for topping if you wanna be extra
Directions:
1. Preheat & Prep
Set that oven to 425°F. Grease a 9x9 baking dish like it owes you money.
2. Slice Those Spuds
Thinly slice your potatoes (about 1/8 inch thick). Use a mandolin if you’re brave. Use a knife if you like your fingers.
3. Make It Saucy
In a saucepan, warm milk and add in your “Scale Up” seasoning. Stir it like you mean it. Heat until it’s just starting to bubble—don’t boil it like you're angry. Add in about half of your cheese and whisk until it melts.
4. Layer Like a Legend
In your baking dish:
